The Breakfast Bowl

I don’t deserve credit for this one. Brian has an infamous breakfast he makes for himself overseas every day. One morning he cooked up a giant brunch starring these breakfast bowls. I fell in love with him right then and there. True story. All you need is the base ingredients, and then the rest is yours. Add whatever you want; I like to make mine based off what’s in season. It’s simple, easy to cook, and provides energy for those heavier days with lots of training. If you’re craving something a little more sweet for breakfast, check out my overnight oats

The Breakfast Bowl

Ingredients
  • 1/2 cup quinoa
  • 2/3 eggs
  • 1/2 avocado
  • Turmeric
  • Salt
  • Pepper
  • 1 tbsp coconut oil
  • Optional:
  • Black Beans
  • Sweet Potatoes
  • Steam beets
  • Prosciutto/Bacon
Directions
  • Step 1 Prepare the quinoa (you can do this the night before and store in the fridge or in the morning)
  • Step 2 Melt coconut oil in a pan over medium heat
  • Step 3 Crack eggs and pour into pan topping with salt and pepper
  • Step 4 When the eggs are almost scrambled, add the quinoa so it can heat up if you made it the night before
  • Step 5 Mix quinoa and eggs, add turmeric, tapatio, and avocado
  • Step 6 I like to add other toppings and ingredients when available
