Raspberry Walnut Crumble Bars

I was feeling a bit creative this afternoon and wanted to bake some treats for my team. I’m always trying to combine something sweet that’s healthy. From vegan peanut butter cookies to sugar-free almond bark, you name it, I’ve tried to healthify it. Because I’m heading home for the holidays soon, I needed to get through all the food in my fridge. A task only for the brave (and hungry). The sweet, tart taste of raspberries pairs perfectly with the dark chocolate and chopped walnuts. Make them into bars or serve as a sort of tart/pie for a dinner party. Or keep in your fridge to snack on when you need to help that sweet tooth out!It’s so full of flavor you’ll forget that you’re eating dessert.

 

Raspberry Walnut Crumble Bars

Ingredients
  • 1 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 2 tbsp coconut sugar
  • 1/3 cup liquid coconut oil
  • 2 cups fresh raspberries
  • 1/2 cup water
  • 2 tbsp ground flaxseed meal
  • 1/4 cup chopped walnuts
  • 1/4 cup dark chocolate chips
  • unsweetened coconut flakes for topping
Directions
  • Step 1 Preheat oven to 350/175 degrees and line an 8×8 baking pan with parchment paper
  • Step 2 In a large bowl combine the almond flour, baking powder, coconut sugar, and coconut oil
  • Step 3 Once well mixed, add to pan and bake for 10 minutes
  • Step 4 While the base layer bakes, blend together raspberries, flax meal, and water
  • Step 5 Chop walnuts or pulse
  • Step 6 Remove the pan from the oven, top with raspberry mixture spreading across entire pan
  • Step 7 Top with walnuts and dark chocolate chips
  • Step 8 Sprinkle on coconut flakes
  • Step 9 Place bake in oven and continue baking for 40-50 minutes
  • Step 10 Remove from oven and let cool
  • Step 11 Cut into bars or serve as is, I like to top it with coconut milk ice cream when it’s warm!
  • Step 12 You can also remove from oven and let cool, then store overnight in fridge for a more solid bar consistency (I prefer the warm crumble version)
  • Step 13 Store in fridge for a couple days.
