Quick and Easy Eggplant

Let’s be honest, cooking a full dinner can be exhausting. There are times when I just want it to appear in front of me already made. This is my favorite because I can make it in ten minutes while the rest of the meal is cooking. You can throw in a number of different veggies from tomatoes to zucchini. But my personal favorite is eggplant, it pairs perfectly with my mint avocado buddha bowl. Because you can never have too many veggies!

Quick and easy eggplant

  • 1 medium sized eggplant
  • avocado oil
  • rosemary salt
  • Step 1 Preheat your oven to the broil setting
  • Step 2 While it’s preheating, slice eggplant starting from the base and moving in a diagonal direction
  • Step 3 You can toss the eggplant in whatever type of oil you prefer (I like avocado oil or spray)
  • Step 4 Next add seasoning (I use rosemary salt from the farmers market)
  • Step 5 Space the sliced eggplant on a baking sheet and place in oven
  • Step 6 Cook for 5-6 minutes
  • Step 7 For crispier slices, cook one side 4 minutes, take out and flip over, then finish cooking for 4 more minutes
