Mint Avocado Pork Belly Buddha Bowl

I’m all about the buddha bowl. If there’s something I eat more consistently then chocolate, it’s this. I created this right around the time of my pork belly phase (I go through food phases… where it’s all I crave for a month). The cool mint flavor with the salty pork is LIGHTS OUT! I had to put a hidden leftover bowl in the back of the fridge just so no one would eat it. Savage. I know. I love to pair this with my California Greek Salad when having a dinner party!

Mint Avocado Pork Belly Buddha Bowl

Ingredients
  • 1lb pork belly seasoned with salt & pepper
  • 6 carrots
  • 1 beet
  • 1 bunch of kale
  • 2 tbsp olive oil
  • 1 tbsp coconut oil
  • 1/4 cup chopped onion (optional)
  • BASE:
  • Choose from mixed lettuce
  • Cauliflower rice
  • Tortillas
  • Cilantro Yogurt Sauce:
  • 4 tbsp unsweetened almond milk yogurt
  • 2 small avocados
  • 1 juiced lime
  • Chopped pieces of ginger & jalapeño
  • Handful chopped mint
  • Salt
  • TONS OF CILANTRO
Directions
  • Step 1 Preheat oven to 450
  • Step 2 Season pork belly (fat side up)
  • Step 3 Place in oven on baking pan for 30 minutes
  • Step 4 Slice carrots into halves long ways
  • Step 5 Cut and chop beets into squares
  • Step 6 Place veggies in a bag or bowl and coat with olive oil and salt
  • Step 7 Shake well until fully covered
  • Step 8 Reduce oven to 275
  • Step 9 Remove baking pan and place veggies alongside pork belly
  • Step 10 Cook for one hour or until tender, flip veggies half way
  • Step 11 The last ten minutes while the meat cooks, saute chopped kale pieces in coconut oil
  • Step 12 I like to add onion first but it’s optional
  • Step 13 Saute for about 6-10 minutes
  • Step 14 If you are using cauliflower rice, throw in now skillet now for about 5-7 minutes
  • Step 15 Add seasoning here like salt, pepper, turmeric, garlic
  • Step 16 Throw all cilantro yogurt sauce ingredients into a food processor and pulse until desired texture
  • Step 17 Fill a bowl with your base + layer with sautéed kale
  • Step 18 Add your veggies and pork belly
  • Step 19 Layer sauce generously
